Pickles are awesome. Fried pickles, dill pickle pizza, just the word PICKLE makes me want a pickle . And what’s really cool about pickles, is how great they pair with wine. SO. Here’s a simple yet absolutely freaking delicious dill pickle pizza recipe with a wine pairing that you absolutely need to try. Soave. An italian wine made mostly from the grape Garganega that is so crisp, fresh, zesty, and mineral driven, but also SMOOTH as suggested by the name Soave, which actually means smooth. There’s just something about this zippy creamy pizza with this zesty and smooth wine that you just HAVE to try.

The Best Dill Pickle Pizza

Ingredients

Cheesy White Sauce
  • 2 tbsp olive oil
  • 1 tbsp flour
  • 2 garlic cloves , pressed
  • 1 small-medium shallot, finely diced
  • 1/2 cup 2% milk (+ more if needed for desired consistency)
  • 1/4 cup full fat sour cream
  • Juice from 1/2 lemon
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

To prepare the sauce
  1. Heat a medium sauce pan over medium-high heat and add oil, followed by garlic and shallots. Saute for 1 minute until fragrant.
  2. Add flour and mix well to form a thick paste, then add milk, sour cream, and lemon juice. Mix well to combine.
  3. Add Parmesan cheese and stir to melt. Taste and add salt and pepper as needed.
To assemble
  1. Place pizza stone in the oven and preheat to 450 F
  2. Stretch out pizza dough to desired shape and place on a sheet of wax papper.
  3. Pread a thick layer of sauce over the dough, followed by about half the grated Mozzarella.
  4. Add an even layer of sliced pickles, followed by the remaining cheese. Top with even more pickle slices if desired.
  5. Transfer pizza (with wax paper) to pizza stone. Bake for 2 minutes then remove the wax paper. Bake for approximately 10 more minutes, checking on the doneness after 5 minutes.
  6. Remove from the oven and let cool for a few minutes (if you can wait!). Slice as desired and serve with a chilled glass of Soave!
