Reibekuchen (German Potato Pancakes)

Riebekuchen(AKA Kartoffelpuffer, AKA German Potato Pancakes) are a popular German street food that are super easy to whip up and the definition of comfort food! Who doesn’t love fried potatoes!? Reibekuchen is traditionally served with applesauce, but I created a simple lemony chive dipping sauce and the results were EPIC.

Pair this with none other than a dry German Riesling, a wine style that is bursting with flavour and has the crisp acidity to cut through the mouthcoating oiliness from these delicious little pancakes. I recommend the Sybille Kuntz Riesling Trocken Qualitatswein - a high quality riesling from one of my absolute favourite producers. Easy, tasty lil German potato pancakes with a tangy lemony chive dipping sauce!

Ingredients

  • 2-4 tbsp frying oil of choice (I used canola oil)
  • 2 medium to large russet potatoes, peeled and grated.
  • 1/2 medium yellow onion, grated
  • 1 egg
  • 1/4- 1/2 cup all-purpose flour
  • Salt and pepper to taste
Lemony chive dipping sauce
  • 1/4 cup mayonnaise
  • 1/4 cup full fat sour cream
  • 1/4 cup chives, finely chopped
  • 2 tbsp fresh lemon juice

Instructions

To prepare the potato pancakes
  1. Grate potatoes. Using a clean dishcloth or cheesecloth, ring out as much liquid as possible.
  2. In a medium sized bowl, combine grated potato, grated onion, egg, flour, salt and pepper. Adjust flour as needed until you get a sticky mixture.
  3. Form pancakes by hand into desired shape and size*
  4. Heat frying oil over medium-high heat and fry pancakes for approximately 3-4 minutes per side or until crispy golden brown.
  5. While pancakes are frying, make the lemony chive dipping sauce by combining all ingredients.
  6. Once pancakes are done frying, place them on a paper towel to absorb some of the excess oil.
  7. Serve while hot and enjoy with a glass of chilled German Riesling!

Notes

  • You can also just scoop the mixture into your heated oil and flatten with a spoon/spatula to form your pancakes.
