Pickled Strawberry Pie Baked Brie

Wine Pairing: Meinklang Prosa Pétillant Naturel (Pet Nat)

RECIPE


Ingredients:
Pickled strawberries
- 1 cup thinly sliced fresh strawberries
- 1/3 cup apple cider vinegar
- 1 tbsp sugar
- pinch of salt
- 1 tbsp peppercorns
- 1 tbsp chopped sage
- 1/4 cup Water

For the Brie:
-Brie wheel
-Pickled strawberries (see ingredients above)
-Puff pastry
-Honey

Directions:
For the strawberries:
- Add sliced strawberries, vinegar, sugar, salt, peppercorns, sage, and water to a container that you can seal tightly.
- Seal container, shake well and leave in the fridge overnight for 12-24 hours.
- Once ready, drain the liquid and set aside for the Brie!

For the Brie:
- Preheat oven to 350 F
- Place Brie wheel is an oven safe Brie baking dish (see link in bio for the one I use)
- Score top of the Brie and top with pickled strawberries.
- Roll out puff pastry to desired shape/size to fit over your Brie and strawberries (think chicken pot pie crust ☺️)
- Cut a small X in the middle of the brie pie to let the steam escape and then brush with an egg wash
- Bake at 400 F for 15 minutes or until crust is flaky and browning. NOTE: The cheese will likely ooze out of the rind, but that’s ok! It gives it more of a pie vibe anyways.
- Let cool for a few minutes and then serve with a chilled glass of rosé Pet Nat!
